Padoo is a unique, pod-bearing fruit harvested from the Inga edulis tree, a fast-growing botanical often found shading coffee and cocoa plantations in the rainforests of Guyana and the West Indies. Encased in a long, ribbed, and somewhat fuzzy green-to-brown pod, it is a seasonal delight of the Caribbean. These fruits are chosen for their high moisture content and their historical role as a cooling, natural "candy" used to refresh the body during long hours of outdoor labor.

The flavor is a delicate, airy sweetness, often compared to vanilla or a light honeyed cream.
